I'm not sure what to call this concoction. Its a cross between ribbon pasta and pad thai...thai pasta? ribbon thai?
Whatever its called, it's yum (if I do say so myself!)
My intention was to make some pad thai, but (surprise, surprise) I had no rice noodles. So I substituted with pasta. Not as good as the real thing, coz the pasta soaks up most the sauce - or I just didn't make enough - but if anything, it offers another alternative to my regular pasta and tomato sauce.
Especially yum with roasted cashews :)
